Are you team Medium Rare or Well Done? 🥩 A raging debate more controversial than ones political beliefs, that I’m sure will continue in the comment section. Here is my perspective: People should enjoy what they like and should not be judged for it. However, I do believe that objectively, certain cuts are optimized at different temperatures based on 3 variables: tenderness, juiciness, and flavor. Here are some examples: Filet mignon: extremely lean and tender meaning it will quickly deteriorate and dry out if over cooked. For that reason a low temperature between 120-130F (rare) is often preferred. Cook a filet to 165F (well done) and the result will be extremely dry. Brisket: filled with collagen and extremely tough, only becoming tender and juicy at high temps. Taking it up to a high internal temp between 200-210F (well done) is preferred. Cook a brisket to medium rare, and the result will be inedibly chewy. As such, internal temps are highly dependent on the cut of beef itself! Another critical piece of information is that some cultures commonly consume cuts that are optimized at lower temps while others primarily eat cuts that are high in collagen and require “well done”. I think this contributes to such strong and often conflicting opinions of the best way to cook beef. Rare steak is pretty safe to eat, because the germs of greatest concern are usually found on the surface and will be killed when seared. But, as Dr. Francisco Diez-Gonzalez of the University of Georgia's Center for Food Safety explains, research shows similar germs can live deep inside the muscle of chicken, and therefore can't be killed by simply searing the exterior. Ground beef is more dangerous than whole cuts because the exterior has been mixed into the interior. Fish is more complicated (depending on the species), but very few people get sick from eating totally raw fish (i.e. sushi). High-quality pork can be safe when cooked pink, as the U.S. Department of Agriculture (finally) acknowledged in 2011. Generously season all sides of the steak with salt and pepper. 2. Heat the canola oil in a pan over high heat until smoking. Do not use olive oil, as its smoke point is significantly lower than that of canola oil and will smoke before reaching the desired cooking temperature. 3. Sear the steak for 3-4 minutes on the first side, then flip. Times may vary depending on the thickness of the steak. 4. Add the butter, garlic, rosemary, and thyme and swirl around the pan. Transfer the garlic and herbs on top of the steak and baste the steak with the butter using a large spoon. 5. Baste for about 3 minutes, then flip and baste the other side for about 15 seconds. 6. Turn the steak on its side and cook to render off any excess fat. 7. Rest the steak on a cutting board or wire rack for about 10 minutes. Here is a few tips on how to cook a medium-rare steak at home. The cut that I am using here is a New York Strip Steak which has also been grass fed. I like to cook the fat cap and develop a really strong crust on each side of the steak - max heat. As the crust and fat have been developed I add crushed garlic and butter utilizing the melted butter to baste the steaks crust. How people like there steak is quite subjective but always use a thick cut. In this video we demonstrate how to cook the perfect roast beef done to medium rare. The process is fairly straight forward. It involves seasoning the beef, on all sides, with a combination of of spices such as thyme, rosemary, garlic, salt, and pepper. We coat the roast with olive and then rub the spices into all sides. It is important to note that the meat be at room temperature, so I leave mine out for about 6 hours. Next, the roast is placed in a baking tray lined with foil and placed into a 500 degree F or 260 degrees C preheated oven for 5 minutes per pound. My roast was about 3.36 pounds, so I left it about 17 minutes or so. After about 17 minutes, the heat is turned off and the roast is left in the oven to bake for 15 minutes per pound. It is very "important not to open the oven door at all." In the case of this roast, I left it for 50 minutes, pulled it out, and allowed it to rest for an additional 15 minutes. Serve the roast up with some gravy and the vegetables or your choice. During the cooking process, the meat does release juices which is used to make a beautiful gravy. I know, the method sounds a bit odd and somewhat frightening, but believe me, it works. You will end up with a superb medium rare roast of beef. Visit 🤍 for printable recipes Facebook 🤍 Instagram 🤍 Twitter 🤍 Tumblr 🤍 Ingredients: 1 round roast or the roast of your choice around 3 pounds or 1.4 kg at room temperature 1 tsp of dried thyme 1 tsp of dried rosemary 1 tsp of pepper 1 tsp of salt 2 tsp of minced garlic olive oil For the Gravy: 2 tbsp of unsalted butter 2 tbsp of flour 3/4 cup of beef stock juices from the roast Method: Line a metal baking tray with aluminum foil. Place the thyme, rosemary, pepper, salt, and garlic into a small bowl and mix until well combined. Rub the top of the roast with olive oil and message the spices in. Do the same for the other side. Place the roast in the oven and bake for 5 minutes per pound. Turn the heat off (do not open the oven door) and allow to roast for an additional 15 minutes per pound. Remove the roast from the oven and allow to rest for an additional 15 minutes. To Make the Gravy: While the roast is resting, add the butter to a pan over medium heat and allow it to melt down. Put the flour in and whisk until a roux forms. Keep whisking until desired level of brownness is achieved. Add in the juices from the roast and the beef stock. Whisk until well incorporated and the gravy thickens. Slice the beef, pour the gravy over, and serve with the vegetables of your choice.
